There are several foods sold by street food vendors in Nigeria. Most of them are seasonal. The one that is unique and stand tall among them is popularly called âakaraâ. In the northern part of Nigeria it is known as âkwosaiâ. It is called beans cake in English. No matter the streets you find yourself, village or city in Nigeria just ask around you will always find someone frying it for sell in the morning, evening or at night.

How is it prepared?
Obtain some beans or kidney beans and separate stones, chaffs and other unwanted particles from them. Soak the beans quantity in water for thirty minutes. Drain the water from the soaked beans. Pour the beans in a mortal and stir them with pestle gently to remove the covers. After removing the beans cover. Separate the kidney beans from the covers.
Having done that, the next thing is that youâll add some peppers and onions. You will take it to the blending or grinding machine where it will be grinded or blended. It is called âakara elepoâ in South Western Nigeria. Once you mention the word âakaraâ in the southern part of Nigeria or âkwosaiâ in the northern part of Nigeria everybody knows what you mean.
You can fry it using either vegetable oil or red oil. Which ever oil you prefer, pour your oil in a pan and let the quantity be much so that theyâll float. Allow the oil to heat a little. Once it is heated (that is, the oil in the pan). Just use big spoon to gently drop the balls in the heated oil. Make sure you monitor it. By turning it so it wonât get burnt. When itâs brown, turn it to the other side. Thatâs how you will be doing untill youâre through.
The beans cake can be consumed with maize or guinea corn porridge, custard, solid pap while some prefer to eat it with bread. It can also be eaten alone as well.
